Redefining Elegance: Chef Jessica Hickman and the Revival of August the Mansion

Location
1680 Mansion Way, O'Fallon, IL, 62269

At the heart of O’Fallon stands August the Mansion, a breathtaking 1857 landmark that combines historic charm with modern culinary artistry. Behind the scenes of its recent transformation is Chef Jessica Hickman and GM Alejandro Molina, whose thoughtful approach to food and hospitality is helping reshape its reputation into something welcoming, warm, and unforgettable.

Originally renovated in 1999 to include its now-iconic kitchen and parlor spaces, the Mansion entered a bold new chapter in 2020 when Candice and Justin Mills became owners.

Since then, the Mills have overseen an elegant series of updates, from refreshed staircases and downstairs bathrooms to intricate ceiling details that highlight the building’s storied architecture. Most recently, the second floor which was once used as private living quarters has been transformed into a beautiful, flexible venue space ideal for private parties, bridal suites, networking events, and more. One of the upstairs rooms can convert into a satellite pop-up bar. The luxurious clawfoot tub in the second story bath adds a touch of vintage glam.

In the kitchen is where August the Mansion truly comes alive.

“We want people to feel like they belong here,” says Chef Jessica. “Whether you’re in jeans or dressed for a night out, our goal is to make this experience approachable, and the food unforgettable.”

Chef Jessica’s menu celebrates local sourcing and seasonal flavor. Local ingredients chosen from over 20 nearby farms and thoughtfully selected products like teas from Fezziwig’s Market, every plate supports the community that surrounds it resulting in inspired dishes that balance elegance with down-to-earth flavor. Fan favorites include the award-winning Brussels sprouts, the chef’s personal go-to seasonal fish entrée, and the decadent Ernst Farms 14oz NY Strip Steak Frites with béarnaise and pomme frites.

Dining options are as versatile as the menu itself. The Parlor Bar, with ample seating and garden views, requires no reservation and invites guests to order from either the parlor or dining menus. Outside, garden seating offers a cozy, fire-pit-lined backdrop perfect for relaxed evenings under the stars. For an unforgettable culinary experience, guests can reserve the Chef’s Table, a private tasting room where historic photographs line the walls and courses can be paired expertly with wine.

Families aren’t left out, either. Kids can choose through their own menu complete with s’mores kits, adding a playful touch to the fine dining experience.
